Raw Cashews

Whole cashews, unroasted and unsalted, with the soft creamy bite that makes them the most forgiving nut in an Indian kitchen. Soak and blend them into gravies and kaju katli, toss them through pulao, or simply work through a handful while the chai comes to a boil. Airtight jar, so none of them ever turn soft.
